Ingredients:
45 oz can beets drained or (3) 15 oz cans
1/2 red onion chopped
1/4 cup balsamic vinegar
1/2 cup roasted pecans
2 tbs olive oil
3 oz plain goat cheese
3 tbs fresh parsley chopped
salt and pepper to taste
Instructions:
1. Mix beets, red onion, and balsamic vinegar together and marinate 1 or more hours. (The longer the better flavor.)
2. Toss the beet mixture with the remaining ingredients. Serve.
